Recipe: White Chicken Chili

Our White Chicken Chili has made it into the bowls of many friends and family. We love sharing it and they love eating it! We have made it for the crews he has worked with and once we made a quadruple batch during a camping trip. Be warned, it's spiciness can open up those nasal passages. Breaking out this recipe on the blog makes me a little nervous I have to admit. By giving it away to all of you I'm giving away one of my best recipes! Please inbox me your favorites!


To make White Chicken Chili you'll need:

1 can Red Beans
1 can White Beans
1 can Black Beans
1 can Corn
1 can Ro*Tel (diced tomatoes & chiles)


Onion, chopped
Garlic, diced
1 lb of boneless, skinless breasts, cubed
olive oil
McCormick's White Chicken Chili Mix (*secret ingredient)

Sour Cream
Shredded Cheese *we like Cheddar and Jack

Once your prep is done, use your biggest pot and saute up the onions until translucent(with the lid on and constant movement you can keep them moist), then add garlic. Shortly after add chicken and cook up to 15 minutes until chicken is all white, stirring continuously. Open all cans red beans, white beans, black beans, corn and Ro*Tel and dump them in, keeping all the juices. It's such a beautiful mix of colors! Now add the secret ingredient and stir! Let simmer for up to an hour depending your stove top, how much propane you have and how fast you want to eat it!

Before serving each bowl gets topped with a spoonful of sour cream, it helps cool things down and gives it a wonderfully creamy flavor and a sprinkle of shredded cheese! And....Voila! White Chicken Chili in minutes! My favorite snuggly weather, comfort food meal in a flash! Bon Appetite!
