I remember this taste so vividly. In Elementary school we made this delicious confection around the time of March in celebration of St. Patrick's Day. It's super easy and delicious. I'm not going to say it's not hella bad for you but I do indulge every now and then. I stick to the theory everything in moderation. AND in the spirit of sharing I decided to post this blog about making Irish Potato Candy so you fine folks at home could try it if you like!
Ingredients:
16 oz pkg Powdered Sugar
7 oz pkg sweetened shredded coconut
8 oz softened cream cheese
1/4 cup of softened butter
1 tsp vanilla
1 tbs cinnamon
In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners' sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color.
This made about 40 or more bite size potatoes and I spread the love all over town giving some to our friends on the dock, at the marina office and at work. I plan to make at least a batch a week until St. Pattie's day.
No, I'm not Irish but I'll take any reason to celebrate!
